Sanitation, and how to check it in ten seconds
This is first because it's the only category where the downside is a health problem rather than a bad manicure.
Look at what comes out of the drawer. Files and buffers should be either single-use or visibly sanitized. Metal implements should come from sealed pouches or a visible sterilization process, not a jar on the counter. Pedicure basins should be lined or properly cleaned between guests — pipe-free basins are easier to sanitize than jetted ones, which is why many salons moved to them.
You're allowed to ask. Anyone who's confident in their process will answer easily, and the answer tells you a lot.
Whether they'll tell you no
The best technician you'll ever have is the one who says your nails need a break, or that the length you're asking for won't survive your job, or that the design you brought needs simplifying at your current nail length.
